In the heart of north-eastern Italy, at a mere 50 km from Venice, lies the unmistakable terroir of Prosecco.
In this splendid area, stretching from the Conegliano and Valdobbiadene hills to the river Piave, our vineyards are cultivated according to organic principles.
La Jara distinguishes itself through the production of high-quality organic wines, inspired by principles of respect for the vineyard and for its natural fertility cycle. In the flat fields surrounding the winery, the long aligned rows stretch for 50 hectares, as far as the gravelly bed of the river Piave, which has shaped this unique terrain.

Our love and respect for this soil prompt us to work symbiotically with the environment and with all of its components, preserving their balance. Our work in the vineyard scrupulously follows the natural cycle of our vines, respecting the seasonal trend of their growth and fertility. Setting aside haste and personal needs, we devote ourselves to the meticulous care of every single vine; we place ourselves at the service of the soil – just as papa Bruno has been doing since his childhood when grandpa Pietro entrusted him with this enormous responsibility.
Bruno still loves to spend his time among the rows of what he fondly defines as “his first love”: the vineyard. He knows his vineyard plant by plant; he knows how to interpret the signs of nature, to help his vines reach a harmonious balance – the aromas, colours, and sensations that have guided him since a very early age and continue to do so to this very day.
He rigorously supervises every operation in the vineyard, from pruning to harvest, according to traditional peasant methods: the resulting organic wine – with its unique and authentic flavours and aromas – reflects respect for the soil and for the environment.
We like to think that Nature is a perfect mechanism, whom it is our duty to indulge: day-to-day attention to the vineyard renders our grapes – and our wines – truly exceptional.
History
The vineyards here have been passed down through the generations since 1891. The 'Jara' name comes from the gravel that covers the vineyards and provides heat to the vines overnight – as they do in Chateauneuf-du-Pape.

Tasting Notes
Nose
Aromas of stone fruits, particularly peach, and also hints of apple.
Palate
A crisp, light, and well-balanced wine with creamy mousse and delicate apple and pear characters.
Production Method
The Glera grape variety pre-dates Roman times. The grapes for Lunetta are sourced from the hills above Treviso, a traditional growing area for Prosecco. Hillsides with cool, loose soils are favourable. The grapes are harvested by hand in the second half of September. The must from the first soft pressing of the grapes is used - left for 10-12 hours for any sediment to settle. It then ferments in stainless steel for around 10 days. The second fermentation takes place by the Charmat method.
Producer
Cavit is a leading co-operative in the mountainous Trentino region of northeast Italy. The winery began as a consortium of associated grape growers in 1950, with a dedicated winery at Ravina di Trento built in 1964. Today It unites 11 separate cellars and their combined 4,500 grape growers across 7,000 hectares of vineyard, to produce an impressively broad portfolio from an intriguing palette of indigenous and international grape varieties. Trentino has a much higher proportion of wines produced as DOC than any other region in Italy - an average of 80% of the region's wines have a DOC classification, compared to around 30% elsewhere in the country. Remarkably, Cavit accounts for 60% of this region's wine production and they advise and supervise all aspects of this production from the vineyard to the bottle. Their site at Maso Toresella on the shores of Lake Toblino was the historic residence of the Prince Bishops of Trento, surrounded by 6.5 hectares of vineyard. It is one of the most significant 'masi' (rural estates) in the whole of Trentino. They have worked with the San Michele all’Adige Oenological Institute, since 1988, to develop wines of the highest quality. In 1993 Cantina Altemasi was established, also at Ravina, not far from the region's capital of Trento - for the production and maturation of Classic Trentodoc and Charmat Method sparkling wines. Trento Doc was the first Classical Method sparkling wine DOC to be established anywhere in the world after Champagne, and the first in Italy.
A Note on Sustainability
For more than two decades Cavit has adhered to the “Protocol for the Production of High-Quality Wines in Trentino”, marking its commitment to fully sustainable agriculture. It is also a member of SEDEX and is working towards SNQPI (Sistema di Qualità Nazionale Produzione Integrata) certification for its commitment to sustainable agriculture. In addition to using only green energy, Cavit has made major investments aimed at reducing energy consumption. Specifically, it has built three photovoltaic generators that produce part of its energy requirements from renewable sources (more than 800 Megawatts per year), significantly reducing carbon dioxide emissions.
PICA (Integrated Agricultural and Wine-producing Cartographic Platform), is the result of a five-year research project conducted by Cavit in collaboration with MPA Solutions and leading research centers in Trentino: the Edmund Mach Foundation (FEM) and the Bruno Kessler Foundation (FBK).
The PICA platform is a complex system, but it works in a simple way. By networking the 4,500 vine growers of the 11 Cavit wine producers’ co-operatives it collects information and gives advice. The main purpose of this platform is to help the grower to achieve total sustainability. The project comprises of two main areas.
The first defines the choice of the most suitable grape varieties, on the basis of the technical and environmental parameters of the soil; the second involves the creation of an avant-garde system with which agronomists and winemakers can receive specific information concerning each vineyard and the various phases in the cultivation of the vines. In practice, waste is eliminated and the grower has total control. For example, it is possible to regulate the water supply according to the characteristics of the soil and the weather conditions.

Originating from Chile, Fresita features a distinct combination of the highest standard of sparkling wine and carefully chosen strawberries. Created using the Charmat method of winemaking, it delivers a balanced, elegant, refreshing, and natural taste, aroma, and flavour.
The term “Fresita” is of Spanish origin and means “strawberry.” Initially, when the fruit got discovered in Patagonia of Chile, people knew of its white variants. Later, Amédée-François Frézier presented them to the world in 1714. Eventually, the strawberries of red colour evolved, and now, very few knew that the white ones also existed. In recent times, however, both the Chilean strawberries get celebrated for their delicious fragrance, sweet taste, and size.
Creation
The creation of Fresita in 1992 was due to the motivation to deliver a unique beverage that appeals to people’s desire for a genuine experience. The wine has a blend combination of Sauvignon Blanc, Chardonnay, and Moscatel.
Each varietal gets fermented in separate chambers to create their unique still wines first. Then, they get blended, followed by a second fermentation process. This dual treatment helps attain an exceedingly dry base for the sparkling wine of Fresita.
At the final stage of the winemaking, freshly picked and intensely flavoured strawberries of the Patagonian variety get added to the product. It results in the deep, fruity, luscious, and smooth salmon pink colour of Fresita with strawberry pulp suspended or floating in it.
Fresita contains persistent bubbles and solely 8% alcohol, making it a drink that people with low alcoholic tolerance can enjoy. It offers a beverage that is full of the sweetness of strawberry with the appropriate amount of intensity. The sparkling wine provides a refreshing feel, especially when served and drunk chilled.

A fresh and dry sparkling rosé with persistent mousse, beautifully salmon pink in colour. Red berry characters on the nose and palate leading to a fresh, delicate and incisive finish.
Production Method
The grapes are sourced from the hills of the Adige and Vallagarina valleys in Trentino. Grapes were hand-harvested at the start of September. Chardonnay grapes were soft pressed to yield the best portion of must - after decanting for 10-12 hours this goes into stainless steel tanks for fermentation. The red grapes are harvested early to maintain good acidity levels and are vinified as for rosé wines. After stabilisation and clarification, the wine undergoes a second fermentation (Charmat method).

Pressed slowly and gently to draw out the distinctive colours and flavours. The result is a delicate, dry Rosé with a balanced floral character and complex notes of white peach and red berries.
The Winery
Exton Park is a Hampshire sparkling wine producer with a 60-acre single vineyard planted on a south-facing slope in the South Downs National Park. Their first vines were planted in 2003, including Pinot Noir, Chardonnay and Pinot Meunier and their state-of-the-art winery was built in 2011. A luxurious, private event space overlooking the vineyard is also under construction and will be opening later this year. With a 60-acre single vineyard, a bespoke winery and a breath-taking promotional facility all on one estate, Exton Park will be able to offer guests an unrivalled English wine experience.
2021 marks the release of their Reserve Blend range. These are traditional method sparkling wines that challenge classic winemaking conventions. They do not rely on a base vintage like other English sparkling wine producers. Over 80% of each blend is composed from their extensive archive or reserve wines.
The number of reserves in each blend is reflected in the name of each wine. For example, Exton Park RB28 Blanc de Noirs is created from a blend of 28 wines. This unique approach has been pioneered by Head Winemaker Corinne Seeling to ensure consistency, quality and complexity with each bottling.

Tasting Notes
Nose
This complex and indulgent MCC shows rich secondary aromas with orange blossom and lemon zest on the nose.
Palate
On the palate there are hints of lime, accompanied by aromas of toasted bread and macadamias. The mousse is fine, elegant and ensures a rich, creamy and textured palate with an explosive acidity and lasting, elegant finish.
In the Cellar
The grapes were whole bunch pressed and only free run juice was used for the final blend. A Selected yeast was used for primary fermentation. A 20% portion of the Chardonnay was allowed to undergo malolactic fermentation. The wine was blended, bottled and underwent a secondary fermentation in the bottle. This was followed by bottle maturation of approximately 36 months. Only then it was disgorged, corked and labelled.

Production
From selected parcels of Glera grapes grown northeast of Treviso. Hand harvested at optimum ripeness. Gentle pneumatic pressing followed by slow, cool fermentation in stainless steel. Second fermentation in tank, lasting 4 weeks.

Tasting Notes
Nose
Sourdough aromas combine with crunchy green apple fruit to provide a wonderfully welcoming nose.
Palate
The palate is fine with a lively and persistent mousse. Green apple and pear fruit characters mix with a toasted brioche leesy flavour helping to provide a complex and moreish palate. Balanced acidity and a long finish make this a very classy sparkling wine.
Producer
When it comes to English wine there’s a lot to shout about, not least the stunning sparkling wines from Henners. Based just 4 miles from the sea in Herstmonceux, East Sussex, the 7 acre vineyard was created in 2007 by ex-Formula One engineer, Lawrence Warr. The winery was named in honour of Larry's French ancestor, Henners Dubois, who was forced to flee Paris for England during the French Revolution in the in the late 18th Century.
Boutinot was the sole distributor of Henners from this time and developed strong ties with the winery and its wines… so when the opportunity arose 10 years later to buy the estate, they jumped at the chance. Planted with traditional Champagne varieties of Chardonnay, Pinot Noir and Pinot Meunier, the vines thrive in an idyllic microclimate created by the vineyard’s proximity to the sea, low altitude (only 24 metres above sea level) and steep, sunny, south-facing slopes.
All Henners wines are hand-crafted from start to finish; with separate fermenting of varietals and their vine clones to allow a broader range of wines for final blending; extended lees ageing for added complexity; and holding back of all bottles for at least 3 years prior to release to add depth and richness to every wine. Hand-crafted with every attention to detail, our winemakers create award-winning wines of depth, complexity and elegance that are perfect for any occasion.
Production Method
Henners Brut is produced solely from grapes grown on our outstanding estate, in Herstmonceux East Sussex. We found the unique combination of warm well-drained soils, southerly aspect slope coupled with low altitude. The result is perhaps the finest vineyard microclimate in the country. We take a non-interventionist approach in the winery, made possible by the quality of the fruit. Vine clones and varieties are fermented separately to allow a broad palette of wines for final blending. Approximately 85% of the wine goes through malolactic fermentation. A proportion (10%) is fermented in aged oak barrels to add subtle character and layers to the wine. This wine spent approximately 36 months on its lees. Dosage of 7g/l.
A Note on Sustainability
Already a founder member of WineGB’s Sustainability Programme Henners Vineyard can now announce it is one of just 18 accredited members to have been certified as sustainable by Wine GB. This is an endorsement to Henners’ commitment to winemaking and winery management that have minimal environmental impact, as well as the ongoing promotion of biodiversity in the vineyards and protection of soils. This is no easy task to attain, requiring annual review for accreditation and ongoing improvement in methodology.

Our love and respect for this soil prompt us to work symbiotically with the environment and with all of its components, preserving their balance. Our work in the vineyard scrupulously follows the natural cycle of our vines, respecting the seasonal trend of their growth and fertility. Setting aside haste and personal needs, we devote ourselves to the meticulous care of every single vine; we place ourselves at the service of the soil – just as papa Bruno has been doing since his childhood when grandpa Pietro entrusted him with this enormous responsibility.
Bruno still loves to spend his time among the rows of what he fondly defines as “his first love”: the vineyard. He knows his vineyard plant by plant; he knows how to interpret the signs of nature, to help his vines reach a harmonious balance – the aromas, colours, and sensations that have guided him since a very early age and continue to do so to this very day.
He rigorously supervises every operation in the vineyard, from pruning to harvest, according to traditional peasant methods: the resulting organic wine – with its unique and authentic flavours and aromas – reflects respect for the soil and for the environment.
We like to think that Nature is a perfect mechanism, whom it is our duty to indulge: day-to-day attention to the vineyard renders our grapes – and our wines – truly exceptional.
History
The vineyards here have been passed down through the generations since 1891. The 'Jara' name comes from the gravel that covers the vineyards and provides heat to the vines overnight – as they do in Chateauneuf-du-Pape.

Colour
A delicate salmon pink, Il Frappato Spumante Rosé has a fine and consistent perlage.
Nose
Elegant, with fresh fruity notes on the bouquet, reminiscent of wild strawberries, raspberries and pomegranates.
Palate
On the palate, the wine is delicate and harmonious, with lovely fresh fruit flavours, citrussy notes and a pleasant acidity.
Harvest
The Frappato grapes are hand-picked during the first few days of September once the grapes have reached the perfect balance of sugars and acidity needed for making a good spumante. The grapes are put into small containers and are refrigerated for around 48 hours to reduce the temperature to about 8-10°C.
Vinification
After very careful destemming, the grapes are put into a pneumatic press, where they stay for around 2 hours and are very, very gently pressed at 0.2 bar. The must is chilled to facilitate natural sedimentation. The alcoholic fermentation occurs at 18-20°C for around 8-10 days and the base wine is then kept refrigerated.
Secondary Fermentation
The secondary fermentation for Frappato Brut takes place in small autoclaves at a temperature not exceeding 14°C. The special yeast strains added to initiate the second fermentation work very slowly at this low temperature, helping to retain the freshness and typical characteristics of the Frappato.

The Winery
Exton Park is a Hampshire sparkling wine producer with a 60-acre single vineyard planted on a south-facing slope in the South Downs National Park. Their first vines were planted in 2003, including Pinot Noir, Chardonnay and Pinot Meunier and their state-of-the-art winery was built in 2011. The Production
The grapes for Araldica's Moscato d'Asti are sourced from their members' vineyards, in the Monferrato hills in the south of the province of Asti in the Piemonte region. The vineyards have a south-westerly aspect and are at altitudes of between 250 and 400m above sea level. Vines are grown in limestone-clay soil using the Piedmont low Guyot trellis. The average age of the vines is 30 years and the planting density 4,000-4,500 vines per ha. Yields are 77 hl per ha. The fruit is hand-harvested between 1st to 12th September. Fermentation in pressure tank under temperature control. The fermentation is deliberately stopped by chilling and filtration to retain just 5% alcohol and a luscious natural sweetness.
Producer History
Araldica is Piemonte's most forward-thinking co-operative, situated in Castel Boglione, in the heart of Barbera d'Asti territory. Here they work with 230 grower members to source quality grapes from around 690ha of vineyards. Many of their members joined the co-operative in the 1950s and have a long and loyal relationship with the winery. They produce wines from Piemonte's main DOC / DOCG regions - predominantly Barbera, Gavi and Moscato, but also including Barolo, Barbaresco and Roero Arneis.
Founded in 1954 by Livio Manera, father of the current Managing Director and winemaker Claudio Manera, Araldica has developed over the past 60+ years to become a major winemaking force in Piemonte, supplying wines across the globe. Claudio's wife Lella heads up quality control at Araldica, where she is responsible for the blending and approval of all wines.
Their son Carlo, also a qualified winemaker, is now part of the Araldica winemaking team. Livio pioneered developments in winemaking techniques - especially with regard to the production of Barbera - and Araldica have since continued to be instrumental in the distribution of Barbera and Gavi within the UK market and internationally. As Claudio states their aim is "...to provide a range that is both understandable and accessible. Quite simply, wine for drinking and enjoying."
A Note on Sustainability
Araldica’s 140 associates, farming 900 hectares of vineyards, have obtained the SQNPI trademark - Sistema di Qualità Nazionale di Produzione Integrata (National Quality System of Integrated Crop Management). Wines and vintages that are now fully compatible with this system have a bee symbol on the label, which guarantees that each phase of production has complied with the strict parameters of integrated crop management. In other words, it is sustainable and eco-compatible, certified by an independent third party. Araldica is also developing a programme of organic viticulture.

Second fermentation takes place in pressure tanks, where the wine spends 2 months on lees.

Production Method
Sourced from 35ha of traditional varieties cultivated on the Can Macia estate, in the Anoia river basin near Odena. Produced using the traditional Cava method, with secondary fermentation in bottle. The wine sees extended maturation (22 months) before disgorgement to enhance the complex, fruity aromas. No dosage is added for this 'Nature' style.
Producer
The Can Macià estate in Odena - around 50km north west of Barcelona and just 10km from the foothills of Montserrat - dates back 800 years and still belongs to the same family, of which Jordi Casanovas Bohigas is a direct descendant. He, together with his daughter Maria Casanovas Giró, run the winery and estate.
Cava is king here. Mas Macià's first Cava was released in 1936, but much of its production was still sold to other Catalan producers. However, investment in the cellars in 2000 led to renewed emphasis on high quality estate-bottled wines, both sparkling and still.
The Can Macià estate has over 35 hectares of vineyard, along with forests and wheat fields. The family also owns the 54 hectare Can Batllevell estate in Gelida (half-way between Odena and Barcelona) where its limestone soils and Mediterranean climate lead to early-maturing grapes. These estates combined mean that the family has access to Macabeo, Xarel-lo, Parellada, Garnatxa Blanca, Chardonnay, Pinot Noir and Cabernet Sauvignon - with some vines over 50 years old.
At 450m in altitude, the estate is the second-highest winery in the region and at the very limit of Cava production.
Sustainability
Mas Macià’s vineyards are now certified organic and the Bohigas family is planning to produce organic still wines initially before focusing upon organic Cava production.

Nose
Henners Rosé NV is made from Pinot Noir and Pinot Meunier, using the saignée method to draw colour from the grapes at the pressing stage.
Palate
This sparkling rosé delivers classic English red berry fruit flavours including raspberries, redcurrants and rhubarb. A minimum of 18 month ageing on the lees brings a delicate creaminess to the wine.
Producer
When it comes to English wine there’s a lot to shout about, not least the stunning sparkling wines from Henners. Based just 4 miles from the sea in Herstmonceux, East Sussex, the 7 acre vineyard was created in 2007 by ex-Formula One engineer, Lawrence Warr. The winery was named in honour of Larry's French ancestor, Henners Dubois, who was forced to flee Paris for England during the French Revolution in the in the late 18th Century.
Boutinot was the sole distributor of Henners from this time and developed strong ties with the winery and its wines… so when the opportunity arose 10 years later to buy the estate, they jumped at the chance. Planted with traditional Champagne varieties of Chardonnay, Pinot Noir and Pinot Meunier, the vines thrive in an idyllic microclimate created by the vineyard’s proximity to the sea, low altitude (only 24 metres above sea level) and steep, sunny, south facing slopes.
All Henners wines are hand-crafted from start to finish; with separate fermenting of varietals and their vine clones to allow a broader range of wines for final blending; extended lees ageing for added complexity; and holding back of all bottles for at least 3 years prior to release to add depth and richness to every wine. Hand-crafted with every attention to detail, our winemakers create award winning wines of depth, complexity and elegance that are perfect for any occasion.
Production Method
Henners Rosé is produced solely from grapes grown on our outstanding estate in Herstmonceux, East Sussex. We found the unique combination of warm well drained sandstone soils, a southerly aspect slope coupled with low altitude, three miles from the sea and at just 24m above sea level. Harvest usually takes place in late September. The result is perhaps the finest vineyard microclimate in the country. We take a non-interventionist approach in the winery, made possible by the quality of the fruit. Vine clones and varieties are fermented separately to allow a broad palette of wines for final blending. This wine will have spent a minimum of 18 months on lees at time of release, and a minimum of 5 months in cellar post-disgorgement to create a deliberately vibrant and fresh sparkling Rosé. Dosage of 7.5g/l.
A Note on Sustainability
Already a founder member of WineGB’s Sustainability Programme Henners Vineyard can now announce it is one of just 18 accredited members to have been certified as sustainable by Wine GB. This is an endorsement to Henners’ commitment to winemaking and winery management that have minimal environmental impact, as well as the ongoing promotion of biodiversity in the vineyards and protection of soils. This is no easy task to attain, requiring annual review for accreditation and ongoing improvement in methodology.

2016 Pieter Ferriera Blanc de Blanc

Pieter has always been a fearless boundary breaker when it comes to producing some of the world’s best bubbly – his journey started out with three harvests in Champagne before returning to South Africa where he chairs the Cap Classique Association and is a member of the Cape Winemakers Guild. The Blanc de Blancs 2016 is no exception to his rule of excellence.
Tasting Notes
Colour
In the glass, the wine smiles at the eye with an enchanting luminous straw yellow colour, enlivened by a fine beady mousse.
Palate
The experience on the palate is a display of classic yeasty tones beneath an ocean of fine bubbles, these being layered with flavours of lime pith, citrus peel and green almond, the wine finishing on a comforting brioche note. The experience is memorable, a Cap Classique focus and precision with a firm, well-integrated mousse and persistent bead – the universal lifeblood of a great bottle-fermented sparkling wine.
Vintage
The Chardonnay was selected from various vineyard blocks in the famous Robertson wine region, some 160km east of Cape Town. Here the region’s unique soils of weathered shale-rich limestone deposits have ensured Robertson’s status as South Africa’s leading region for the growing of Cap Classique grapes.
Viticulture
In the quest for optimum terroir expression of the Cape Winelands, Chardonnay grapes for this Blanc de Blancs are sourced from a diversity of sites located in a spectrum of spectacular pockets of the Western Cape’s geography. Grapes are hand-picked whereafter each bunch undergoes a thorough selection process ensuring only the finest and healthiest fruit is approved to partake in the magical journey of Cap Classique crafting.
Vinification
Whole-bunch press separates the cuvée from the taille, with only the pure, unblemished cuvée portion used to further the process. After settling, most of the beautiful clear juice is fermented in stainless steel tanks, with a small portion set aside to undergo fermentation in traditional French oak barrels from Tonnellerie Artisanale de Champagne (Pièce Champenoise). This oaked component offers complexity and depth, as well as the focus point required to establish the wine’s exceptional status. The various individual parcels are then selected through a rigorous tasting process to choose individual sections for the Blanc de Blancs.
After the initial fermentation, the wine is prepared for secondary fermentation in the bottle. Here the wine is allowed to live on the lees for six years, drawing structure, palate weight and, of course, creating the millions of magical bubbles. The sediment is removed through the traditional process of remuage and dégorgement, after which the bottles are corked and laid down for six months cork maturation.
6 years on the lees adds layers of brioche character and the limey, almondine mouthful of soft and fluffy mousse leaves you wishing you had bought an extra case!

Hints of lemon come trough in the mouth with an overall round palate suggesting barrel-fermentation before crisp acidity on the finish.
Production
The base wine of this sparkling is a selection of varieties (Pinot Noir Riesling Grüner Veltliner from throughout the wine estate and its locations. The grapes from Heiligenstein, Gaisberg, Grub and Lamm are harvested at the right moment, laid in small boxes and immediately pressed, whereby only the heart of the basic wine is used.
After six months of cask storage, it is filled into bottles for the second fermentation. It then rests for two to three years on the yeast, which contributes to a creamy texture, until it is turned slightly and riddled by hand, then degorged.
Producer
SCHLOSS GOBELSBURG, a Cistercian monastic estate, is one of the oldest wineries in the Austrian Danube area with a documented history that dates back to 1171. All the vineyards are located on slopes and terraces around the valley of the river Kamp near the town of Langenlois and the village of Gobelsburg. Schloss Gobelsburg specialises in Grüner Veltliner and Riesling and produces authentic and noble wines from different single vineyards, villages, and regional appellations. The winery is a member of the association 'Österreichische Traditionsweingüter', which is working on a vineyard classification project for the Danube area.

Producer
The River Piave, in its early life, came tumbling out of the eastern edge of the Dolomites, full of energy. It bumped into the hills around Valdobbiadene, carved a cleft in them and carried on towards the marshy delta that is the eastern side of Venice.
At near exhaustion by its journey, it dumped large deposits of limestone pebbles and stones, known locally as Jara, which has proven a good challenge for vines to produce nuanced, vital fruit and pure wines. This soil absorbs the warmth of the day, and gently releases it at night, providing a steady transition between day and night for the grapes on the vines.
Driving from Venice northwards, there's not much to tell you that you've moved from the over-fertile flatlands that produce so much anonymous, intensively produced Prosecco, to the equally rather flat but charming, stony, organic vineyards of La Jara. Now well established in harmony with nature, the vines are uniform, drawing on a deep bank of nutrients from the ground-down mountain. To this phenomenon the estate credits the delicate floral aromas of their Glera (Prosecco) and Pinot Grigio grapes; combined with a dedication to organic viticulture, they make affordable wines of outstanding quality. In their own words. "We like to think that Nature is a perfect mechanism, whom it is our duty to indulge. day-to-day attention to the vineyard renders our grapes and our wines truly exceptional."
These days, La Jara is a story of two brothers. Massimo, who reminds one of a flamboyant Bond villain, and Paolo who makes the wine. And Giovanni, their sales director of many years, who keeps everyone on track. Their goal has always been to produce bright, easy and pure wines; they are always a joy.
Year after year they've added to their organic plantings, consistently choosing the best sites, and equally, they've kept their wine-making technology and operational know-how up to date, which is crucial in an area that is famously humid and flat.

Production Method
Grapes are sourced from 35ha of vines cultivated on the Can Macià estate, situated in the Anoia river basin, near Odena. They grow in clay-limestone soils and this, together with the Mediterranean-Continental climate and low rainfall, produces low yields with high acidity.
Slow but complete ripening makes this area suitable for the production of high-quality Cava base wines. The grapes are harvested by night, in cool temperatures. Bohigas Cava Brut Reserva is produced by the traditional method, with a second fermentation in bottle, the wine is kept on lees for at least 18 months before release (dosage is 6g/l).
The Estate
At 450m in altitude, the estate is the second-highest winery in the region and at the very limit of Cava production. Some of their vines are over 50 years old.
Mas Macià’s vineyards are now certified organic and the Bohigas family is planning to produce organic still wines initially before focusing upon organic Cava production.

Producer
The Can Macià estate in Odena - around 50km north west of Barcelona and just 10km from the foothills of Montserrat - dates back 800 years and still belongs to the same family, of which Jordi Casanovas Bohigas is a direct descendant. He, together with his daughter Maria Casanovas Giró, run the winery and estate.
Cava is king here. Mas Macià's first Cava was released in 1936, but much of its production was still sold to other Catalan producers. However, investment in the cellars in 2000 led to renewed emphasis on high quality estate-bottled wines, both sparkling and still.
The Can Macià estate has over 35 hectares of vineyard, along with forests and wheat fields. The family also owns the 54 hectare Can Batllevell estate in Gelida (half-way between Odena and Barcelona) where its limestone soils and Mediterranean climate lead to early-maturing grapes. These estates combined mean that the family has access to Macabeo, Xarel-lo, Parellada, Garnatxa Blanca, Chardonnay, Pinot Noir and Cabernet Sauvignon - with some vines over 50 years old.

NV Cantina di Soliera, Lambrusco Grasparossa di Castelvetro DOC

The Lambrusco Grasparossa grapes are sourced from sandy-clay vineyards in the Castelvetro region south of Modena. Made using the Charmat method, with its second fermentation in tank.
Producer
This new range of high quality Lambrusco is a partnership between the Soliera cooperative and Medici Ermete, one of the most influential producers in the renaissance of ‘proper’ Lambrusco. Cantina di Soliera, with 422 member growers and a 40 year tradition of Lambrusco production, is situated in the heart of the Lambrusco di Sorbara zone north of Modena and is the DOC’s largest producer. The alluvial soils here are ideal for the cultivation of the low yielding Sorbara variety, the mixture of sand and clay produces wines which balance elegance and structure and are regarded by many as the finest Lambrusco. Grapes for the Cantina di Soliera range come from 20 ha of selected ‘cru’ vineyards here and in the neighbouring Grasparossa di Castelvetro DOC.
The Lambrusco family of grapes (there are many varieties, once numbered at 56) is thought to be one of the oldest in Italy and is predominantly found in Emilia-Romagna. Today the focus is on a handful of varieties, and Cantina di Soliera specialise in Lambrusco di Sorbara and Lambrusco Grasparossa, the most important of the 5 Lambrusco DOC’s in terms of quality. The former produces light, elegant, floral wines, while Grasparossa typically gives deeply coloured, weightier and more structured wines. Both make fantastic food wines – the delicate Sorbara with cold meats and seafood, the richer Grasparossa a perfect match for fatty sausages, charcuterie, tomato-based pasta dishes and cheeses.
Sustainability
In 2022, Cantina di Soliera achieved Equalitas Winery certification and a proportion of the cantina’s vineyards are in conversion to organic cultivation and they hope to be formally certified soon.

Producer
Grapes are selected from vineyards with diverse soils - limestone, granite, gravel, marl and sandstone - which impart different characters and styles to the overall blend, and harvested by hand and machine, depending on site. This gently sparkling wine is made using the 'méthode traditionnelle' with a secondary fermentation in bottle and a dosage is approximately 9g/l. Cave de Turckheim looks to create a lightly sparkling style with a fine mousse and delicate fruit flavours. Its crémants are therefore aged on lees for longer than the appellation regulations require; for 24 months rather than 12 in this case.
Production
Widely regarded as one of the best co-operatives in the world, Cave de Turckheim lies at the mouth of the Munster Valley. Working closely with 180 partners, its vineyards span the full breadth of Alsatian terroir and grape varieties. Cave de Turckheim only produces wine from the grapes of its member growers, it is a récoltant not a négociant.
Substantial investment in the winery has enabled the team to vinify many parcels of grapes separately, offering Michel Lihrmann (senior winemaker for 25 years) the chance to highlight each wine's nuances in his signature dry, yet fruit forward, style.
Committed to producing the highest quality wines, growers are encouraged to keep yields low - for example, Cave de Turckheim voluntarily caps yields for its Grands Crus vineyards at 45hl/ha rather than the permitted 55hl/ha - and to pick the grapes by hand. This is part of a long term and innovative strategy of sustainability that includes developing the largest holdings of organic vineyards in Alsace, using natural alternatives to chemical treatments, and a green overview of all vineyard practices. Alongside some great organic wines, the extensive range runs from the excellent value Tradition wines right through to individual Grand Cru bottlings, plus fantastic Crémants d’Alsace and Vendange Tardive dessert wines.
Sustainability
An awareness of social and environmental concerns has always been high on the agenda for the Cave de Turckheim’s growers. They were among the first in France to practice integrated agriculture, an approach which combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification then went on to achieve the highest HVE Level 3 certification in 2019.
In 2008, a number of growers decided to commit to the rigorous standards of organic viticulture. As part of Alliance Alsace, approximately 70 hectares of vines are now cultivated organically, having obtained organic certification in 2011, with a further 30 hectares in transition. These vignerons have revived ancestral practices, tilling the soil and undertaking work that facilitates the elimination of weeds and the combat against the two major diseases: powdery mildew which is tackled with sulphur and mildew which is treated with copper sulphate. Natural fertilisers are also used (nettle, horsetail, comfrey and dandelion), fortifying the vines and increasing their natural resistance. Organic winegrowers meticulously observe their vines, enabling them to intervene in the right place and at the right time, rather than treating the plants systematically.
Turckheim’s commitment to the environment extends to the winery where it strives to conserve natural resources. Sorting waste for recycling, reducing its carbon footprint, using solar panels, and preventing pollution are just some examples of how environmental considerations are present in every aspect of its daily work. Committed to both the environment and its customers, Cave de Turckheim also plays an important role in the local economy.
To celebrate its 65th anniversary, Cave de Turckheim planted 65 trees in February 2022 to contribute to the reconstruction and maintenance of their vines and terroirs, as well as to the preservation and enhancement of wider landscapes. Local and ancient varieties were specially selected to contribute to the safeguarding of their genetic heritage.

Producer
Castel del Lupo, in the heart of Oltrepò Pavese, dates back centuries - and includes the eighteenth-century Palazzo Pegazzera. In 1974 three entrepreneurs took over this historic estate and began a regeneration process. Giovanni Doglio, whose father and grandfather were both Piemontese winemakers, has over 40 years of experience managing wineries. Recently joined by his daughter Federica, he has worked tirelessly to develop the estate. They have purchased more vineyards (to cover 100ha at around 300m altitude), planted new vines and built a new cellar. The vineyards are now certified organic. The winery's main focus is high-quality bottle-fermented sparkling wine, and much of the vineyard is planted with Pinot Noir for this purpose. However, these vines are also the source of fine still red wines.
A Note on Sustainability
Led by Giovanni Doglio since 1974, the team at Castel del Lupo is very keen to honour the long heritage of its estate which existed even before its inclusion on a map of the region in 1301. All of Castel del Lupos grapes are estate grown and the 100-hectare property is now fully certified organic to maintain the integrity of the environment, the ecosystem and soil fertility without resorting to artificial substances at any stage of the production processes.

Production of Durello Spumante is mostly in the hands of a few small growers, traditionally producing bottle fermented wine with up to 6 years on lees. However the variety is also well-suited to the production of fresh, zesty tank method wines such as this - aged for 2-3 months on lees.

This traditional method sparkling wine offers fine bubbles and fruity flavours. Applely, floral Pinot Blanc and spicy honeyed Auxerrois are traditionally vinified together, and the Pinot Gris brings body and weight. Fresh, intense and well-balanced, crisp and supple.
Production
Crémant d’Alsace is produced using the same traditional method as Champagne. There is a strict selection of organically-grown grapes, the use of dedicated cellar equipment, a second fermentation in bottle, no filtration other than degorgement, and the wine spends 24 months aging on its lees before release.
Producer
Widely regarded as one of the best co-operatives in the world, Cave de Turckheim lies at the mouth of the Munster Valley. Working closely with 180 partners, its vineyards span the full breadth of Alsatian terroir and grape varieties. Cave de Turckheim only produces wine from the grapes of its member growers, it is a récoltant not a négociant.
Substantial investment in the winery has enabled the team to vinify many parcels of grapes separately, offering Michel Lihrmann (senior winemaker for 25 years) the chance to highlight each wine's nuances in his signature dry, yet fruit-forward, style.
Committed to producing the highest quality wines, growers are encouraged to keep yields low - for example, Cave de Turckheim voluntarily caps yields for its Grands Crus vineyards at 45hl/ha rather than the permitted 55hl/ha - and to pick the grapes by hand. This is part of a long-term and innovative strategy of sustainability that includes developing the largest holdings of organic vineyards in Alsace, using natural alternatives to chemical treatments, and a green overview of all vineyard practices. Alongside some great organic wines, the extensive range runs from the excellent value Tradition wines right through to individual Grand Cru bottlings, plus fantastic Crémants d’Alsace and Vendange Tardive dessert wines.
Sustainability
An awareness of social and environmental concerns has always been high on the agenda for the Cave de Turckheim’s growers. They were among the first in France to practice integrated agriculture, an approach that combines the best of modern tools and technologies with traditional practices, lowering the consumption of energy and other resources, reducing environmental pollution, conserving biodiversity and promoting sustainability. In 2014, all the members of the co-operative obtained Agri Confiance Volet Vert (Green Section) certification and in 2015, they all obtained High Environmental Value Level 2 certification then went on to achieve the highest HVE Level 3 certification in 2019.
In 2008, a number of growers decided to commit to the rigorous standards of organic viticulture. As part of Alliance Alsace, approximately 70 hectares of vines are now cultivated organically, having obtained organic certification in 2011, with a further 30 hectares in transition. These vignerons have revived ancestral practices, tilling the soil and undertaking work that facilitates the elimination of weeds and the combat against the two major diseases: powdery mildew which is tackled with sulphur and mildew which is treated with copper sulphate. Natural fertilisers are also used (nettle, horsetail, comfrey and dandelion), fortifying the vines and increasing their natural resistance. Organic winegrowers meticulously observe their vines, enabling them to intervene in the right place and at the right time, rather than treating the plants systematically.
Turckheim’s commitment to the environment extends to the winery where it strives to conserve natural resources. Sorting waste for recycling, reducing its carbon footprint, using solar panels, and preventing pollution are just some examples of how environmental considerations are present in every aspect of its daily work. Committed to both the environment and its customers, Cave de Turckheim also plays an important role in the local economy.
To celebrate its 65th anniversary, Cave de Turckheim planted 65 trees in February 2022 to contribute to the reconstruction and maintenance of their vines and terroirs, as well as to the preservation and enhancement of wider landscapes. Local and ancient varieties were specially selected to contribute to the safeguarding of their genetic heritage.

Vintage
The Cape Winelands 2015 vintage is a brilliant vintage – known as a ‘rockstar’ year for wine – due to mild, temperate conditions during the growing season which allowed for even-ripening of grapes. These beautiful ripeness levels in the Pinot Noir allowed for a wine offering a bright fresh acidity between the layers of structured complexity.
Vinification
Prior to pressing, the whole bunches were allowed a brief, fleeting period of enzymatic colour extraction to draw sufficient natural colour from the red skins. The whole bunches were gently pressed, with the separation of cuvée from the taille after which the clear juice was fermented in stainless steel. After the first fermentation, the wine was prepared for secondary fermentation in the bottle. The wine was left on the lees for 72 months before the sediment was removed in the traditional process of remuage and dégorgement. The bottles were then corked and laid down for a further six months cork maturation.

Originating from Chile, Fresita features a distinct combination of the highest standard of sparkling wine and carefully chosen strawberries. Created using the Charmat method of winemaking, it delivers a balanced, elegant, refreshing, and natural taste, aroma, and flavour.
The term “Fresita” is of Spanish origin and means “strawberry.” Initially, when the fruit got discovered in Patagonia of Chile, people knew of its white variants. Later, Amédée-François Frézier presented them to the world in 1714. Eventually, the strawberries of red colour evolved, and now, very few knew that the white ones also existed. In recent times, however, both the Chilean strawberries get celebrated for their delicious fragrance, sweet taste, and size.
Creation
The creation of Fresita in 1992 was due to the motivation to deliver a unique beverage that appeals to people’s desire for a genuine experience. The wine has a blend combination of Sauvignon Blanc, Chardonnay, and Moscatel.
Each varietal gets fermented in separate chambers to create their unique still wines first. Then, they get blended, followed by a second fermentation process. This dual treatment helps attain an exceedingly dry base for the sparkling wine of Fresita.
At the final stage of the winemaking, freshly picked and intensely flavoured strawberries of the Patagonian variety get added to the product. It results in the deep, fruity, luscious, and smooth salmon pink colour of Fresita with strawberry pulp suspended or floating in it.
Fresita contains persistent bubbles and solely 8% alcohol, making it a drink that people with low alcoholic tolerance can enjoy. It offers a beverage that is full of the sweetness of strawberry with the appropriate amount of intensity. The sparkling wine provides a refreshing feel, especially when served and drunk chilled.
