Nose
The slopes of Rondekop provide the ideal terroir for our spectacular Cabernet Sauvignon. This wine has a deep ruby core and a depth of black fruits on the nose. Black cherries, black plums and blackcurrant are present, along with spicier notes of baking spice, cigar box and lavender.
Palate
A beautifully defined palate with long-grained tannins and a mouth-watering acidity carries the fruit and the spices to an emphatic finish.

Oldenburg aims to best reflect their remarkable terroir through the Oldenburg Vineyards (OV) range of wines – a range of single cultivar wines. There is minimal intervention in the vineyards and the wines are made in an uncompromising manner.
Vintage Conditions
While winter had a late start, it was characterised by good rainfall, leading to an even budbreak. A turbulent start to flowering season improved towards the onset of summer. Warmer weather in November contributed to even vineyard growth. A moderate January and February was followed by an initially hot February, while cool and wet conditions dominated from the end of February through March, creating challenging harvest conditions. Despite the wetter conditions, our microclimate allowed the grapes to achieve ideal ripeness.
Winemaking & Maturation
Grapes were hand-picked and meticulously hand-sorted before destemming and crushing. After 5 days of cold soaking fermentation began, using on wild yeast. 1 to 3 pumpovers, at the expense of punchdowns, were done per day for optimal extraction. Post fermentation wine completed malolactic conversion and spent 18 months maturing in French oak barrels (27% new).

Nose

Oldenburg’s proprietor – Adrian Van der Spuy – spent a large portion of his life working in the world of precious metals and the name of this wine is a homage to that. Rhodium is one of the world’s most expensive metals and is frequently used in top end jewellery manufacture – and 80% of the world’s supply is mined in South Africa. Fitting name.

2020 was another exceptional harvest. The winter months saw good rainfall – only slightly less compared to the previous year. Spring brought ideal conditions, leading to even bud-break and homogenous shoot growth. The summer ripening period was consistent and moderate, and without heat spikes, bringing about uniform flavour development and phenolic ripeness in the grapes.
Winemaking & Maturation
Grapes were hand-picked and meticulously hand-sorted before destemming. Prior to fermentation, the Cabernet Sauvignon was crushed, while the Cabernet Franc and Merlot were fermented as whole berries. After 5 days of cold soak, fermentation using wild yeast began. During fermentation 1 to 3 punchdowns were done per day for optimal extraction. Post-fermentation, the wine underwent 18 months of maturation as well as malolactic conversion in French oak barrels (28% new).

Winemaking & Maturation
A ‘right bank’ Bordeaux Blend – Merlot (54%) dominant with Cabernet Sauvignon (39%) and a splash of Cabernet Franc (7%)The Cabernet Sauvignon, Merlot and Cabernet Franc grapes were harvested from a North-Easterly facing vineyard on Rondekop. All grapes were stored in a cold-room overnight and then destemmed and sorted by hand, spending five days in a tank to cold soak. The Cabernet Sauvignon and Cabernet Franc berries were crushed and the Merlot berries kept whole. All grape cultivars underwent pump overs 1-3 times per day and were gently basket pressed once dry. Finally, the juice was returned to tanks for malolactic fermentation and then transferred to French oak barrels, of which 26% were new barrels, to mature for 16 months.

Producer
De Toren proprietors Emil and Sonette den Dulk left Johannesburg in 1991 to establish their vineyards in the Polkadraai Hills of Stellenbosch. Situated on southern-facing slopes overlooking False Bay De Toren enjoys the cooling effect of constant ocean breezes. Taking a holistic approach to keeping vineyard soils healthy and balanced viticulturalist Ernest Manuel employs sustainable farming practices throughout the property. Infrared Aerial Imaging is used extensively in order to monitor ripeness in various vineyard blocks and determine optimal picking times although actual harvesting and production are done almost entirely by hand. The winery is operated on gravity flow principles; a 4000 liter pressure tank in an elevator shaft (the Tower from which the winery takes its name) is cleverly used to exploit gravity in transporting wine between tanks and barrels without the use of mechanical pumps. As a result of De Toren’s innovative minimal intervention production methods their wines were among the first South African bottlings to qualify for IP (Integrated Production) certification by the Wine and Spirit Board.
The Den Dulks and winemaker Albie Koch seem to have found the key to success with their simple winemaking philosophy: gentle handling no pumps and minimum manipulation. Armed with this winning formula the boutique farm has quickly risen to the ranks of South Africa’s winemaking elite with their duo of dazzling stylish and complex five-varietal Bordeaux blends: the flagship Fusion V (which debuted in the 1999 vintage and has been hailed by Wine Spectator as a consistently polished outstanding Cabernet Sauvignon-based blend) and the Merlot-based Z introduced with the 2004 vintage.
Barrel Maturation
Aged in a climatized barrel/ maturation room (16 degrees Celsius at 80% humidity) for 12 months in approximately 50% new and 50% second fill, 225 Litre Oak barrels. French Oak is predominantly used during maturation, with a portion of the Malbec receiving the benefit of American Oak.

History
Jeremy Walker founded Grangehurst in 1992, when he converted his fathers’ squash court into a makeshift wine production cellar. He used the ‘squash court cellar’ to make his first 6 vintages, only moving out after the 1998 vintage.
Jeremy was invited to join the prestigious Cape Winemakers Guild in 1996 and was one of the longest standing members when, in order to let a young winemaker take his place in the sun, he elected to step down in 2021.
The Cabernet Sauvignon Merlot blend has been part of the Grangehurst range since our maiden vintage in 1992. As a young wine, still in barrel, the 1992 vintage was adjudged the SA Champion Wine. The 1993 vintage was Wine Magazine’s first 5-star red wine and the 1995 was a Platter 5- star wine. Other vintages of this wine have also been highly regarded, and Grangehurst Cabernet Sauvignon Merlot is a fine quality Bordeaux-style wine with a good track record.
Origin
Selected from prime vineyard areas in Stellenbosch viz. the slopes of the Helderberg Mountain and the Simonsberg. The southerly summer sea-breezes that blow over the cool waters of False Bay contribute greatly to the quality of the grapes from these vineyards.
Fermentation
After destalking and crushing the grapes, the mash was fermented in open tanks for between 8 and 14 days on the skins. The cap of skins was punched down and mixed with the juice 4 to 6 times per day to ensure optimal extraction of colour, tannin and flavours. After completion of the alcoholic fermentation, the free-run wine was drawn off and the skins were gently pressed in a basket press. The press wine was blended with the free-run wine in stainless steel tanks before being transferred to small oak barrels. The malolactic fermentation occurred in tanks and barrels.
Clarification
This wine was clarified according to the natural settling and racking method, which does not involve the use of any unnatural fining agents, centrifuges or filters. This method of clarifying wine prevents it from being stripped of flavours.
Barrel Maturation
The various component wines were matured separately in 225 litre French oak barrels for 27 months prior to blending.
Bottling
Bottled at Grangehurst using a gentle gravity flow filling system. The wine flowed from the elevated bottling tanks through a cartridge filter to the hand filler and into the bottles. This was the only stage during the entire winemaking process that the wine was filtered.

2019 Paul Wallace Crackerjack Bordeaux Blend

Together Paul and Nicky Wallace have put together a "cracker" of a wine, blending and showcasing the versatility of Elgin.
Tasting Notes
The alluring bright colour immediately invites one to explore this wine further. Merlot driven (think Bordeaux Right Bank) and power packed with fresh fruits encompassing both the red and black fruit spectrums, with a savoury core.
Notes of fresh cherry, cranberry, plum and blackcurrant on the palate, with chocolate and vanilla on the finish. Rich and opulent, yet bright and feminine, this little “cracker” is the perfect example of how the whole sum is better than the parts and of how the individual components support and enhance one another.
Winery
Paul Wallace Wines is a small family-run business with the farm located in Elgin, previously best known for its apples and pears, which is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.
Vinification
The grapes all originate for the Elgin region, a high-lying basin surrounded by mountain ranges. Naturally the Malbec hails from Paul and Nicky’s farm, Wallovale Vineyards, whilst the other three grape varieties were bought in from Elgin grape producers with whom Paul has a direct involvement. A Cabernet Franc vineyard has been planted on Paul and Nicky’s farm but the first commercial harvest is only expected in 2020.
Each parcel of grapes was harvested at its own optimum ripeness and vinified separately at Eikendal Winery, Somerset West. Each wine was inoculated with Zymalore Xpure, a yeast recommended for wines with high aromatic purity, enhanced expression of black fruit notes and a great smoothness of mouthfeel. Post fermentation the wine was left for 14 days on the skins. Thereafter each wine was transferred to barrel where they completed Malolactic fermentation. The wines spent a minimum of 24 months in 225 lit French oak barriques prior to blending. The wine received a light filtration before bottling on 8th July 2021.

Aged in a climatized barrel/ maturation room (16 degrees Celsius at 80% humidity) for 12 months in approximately 50% new and 50% second fill, 225 Litre Oak barrels. French Oak is predominantly used during maturation, with a portion of the Malbec receiving the benefit of American Oak.

Nose
Opulent but genteel and tempting violet-tinged soft black fruit abundance on the nose.
Palate
The palate is all about texture: silky, velvety, smooth and simultaneously plush. Ripe plums, hedgerow fruit, cocoa, cedar and spice, cigar box flavours make for an enveloping mouthful. Complex, elegant and beautifully integrated, the oak is seamlessly balanced with the fruit. Lingering & harmonious with not a single element out of place.
Each component was aged separately and then matured in 225L French oak barrels for 20 months with only 30% first fill barrels being used.
In the Vineyard
The grapes selected for the Anthonij Rupert Optima, comes from our L’Ormarins Estate in Franschhoek and Rooderust farm in Darling. Specific sites, each with their own unique soil type and climatic conditions, were identified for the ideal grape selection, which make up unique components of the final blend in Optima. With lower rainfall bringing challenging conditions, the total wine grape production was lower than 2015. With drier weather conditions, the vineyards produced smaller healthy berries with high flavour concentration and good colour.
In the Cellar
An Optical sorting machine was used to ensure that only the best quality grapes are used. Wine was fermented dry on the skins and underwent extended post-fermentation maceration. This ensures deep colour and a good tannin structure enhancing the maturation potential in the wine. Malolactic barrel fermentation completed before the wine was racked off the lees.

The Merlot grapes were harvested by hand at 24.8° Balling.
In the Cellar
After de-stemming and crushing the wine is transferred to 10 000 French oak tanks and 10 000 L stainless steel tanks. Fermentation on the skins takes place at 26°C for about 15 days. The wine is drained from the skins and pressed. The free-run juice and press juice are aged separately and blended after 8 months. Maturation takes place in 225 L 2nd- and 3rd –fill French oak barrels and also on new French oak staves in tanks for about 8 months.

Tasting notes
A fine wine with persistence, complexity and great purity - dense black cassis and bramble fruit aromas combined with plums, spice and a creamy oak on the palate. Showing real character and personality, supreme poise and balance, Waterkloof's ability to express their unique terroir improves with each vintage.
Production
Living soils and a natural approach to winemaking means that each of the single-varietal wines in the Circumstance range is truly defined by the circumstances influencing the chosen varietal and vineyard blocks, including soil, aspect, altitude and vintage. The Merlot is from two adjoining, windswept, south-facing (less sun exposure) blocks 240-60m above and a mere 2 miles from The Atlantic. These factors combine to produce low yields, balanced grapes and wines with a true sense of place. Production was a miserly 5 tons per hectare. Hand-picked grapes were destemmed, hand sorted and placed into our open-top wooden fermenters via gravity. Natural fermentation started spontaneously by utilising the wild yeasts present on the fruit. Punch downs (twice a day) were used during fermentation to ensure a soft and slow, colour and tannin extraction. The wine spent 30 days on the skins to help integrate the tannins and stabilise the colour. The skins were separated from the juice through a gentle basket pressing. The wine went through malolactic fermentation in barrel and was then aged in new (15%), second and third fill (85%) French barrels for 18 months. The wine was aged for another year in wooden fermenters to ensure a wine with silky soft tannins. The wine received no fining, which allowed the grape to be purely expressed in the wine. Only sulphur was added and no other additions, such as tartaric acid or enzymes were allowed.

Founded by Paul Boutinot in 2004, Waterkloof is a family-owned, organic, biodynamic and WWF Biodiversity Champion farm perched high up on the windswept Schapenberg, overlooking False Bay and The Atlantic Ocean. Living soils, naturally low yields and a long growing season help provide talented young Cellarmaster Nadia Barnard with naturally balanced grapes that are imbued with a truly defining sense of origin. Those grapes are then transformed into wine with a minimum of intervention. The resulting wines are fine, inimitable and best enjoyed with food.

Nose
An attractively ripe, red berry nose.

Production
Merlot grapes are sourced from long-standing vineyards on the Swartland/Wellington borders and also the Breede River Valley. Low rainfall, warm weather, mainly decomposed granite soils, and low trellised vines all add really interesting complexity to the final wine. Grapes are picked in mid-March, destemmed and placed in open-top fermenters. Pigeage is carried out four times daily (whilst up to half of the sugar is fermented), then only twice daily to the end of fermentation - this is a soft delicate way of wetting the cap and aerating the wine. Malolactic fermentation follows before the wine is left on its lees to extract extra depth and soft tannins. A touch of elegance is achieved by using a modest amount (10%) of oak.

Some two decades ago, raging wildfires swept through an area of forest high up on Constantia Nek, leaving the slopes scorched and bare. When the fire had subsided, what was left was a brilliant and unique spot for planting a vineyard; 350 metres above sea level, with cooling ocean breezes and steep sun-bathed hills and so, like a phoenix, Beau Constantia rose from the ashes.
Sensing opportunity, Pierre and Cecily Du Preez acquired the 22-hectare property in 2002. With thorough soil analysis guiding their efforts, the inaugural vineyards were planted in 2003 under the careful guidance of farm manager, Japie Bronn.
The journey to establish vineyards on these challenging slopes demanded patience and unwavering commitment. Today, Beau Constantia proudly boasts 11.47 hectares under vine, a testament to the perseverance and dedication of all involved. Within these vineyards thrive a diverse range of varietals, including Viognier, Sauvignon Blanc, Semillon, Cabernet Franc, Merlot, Cabernet Sauvignon, Malbec, Shiraz, and Petit Verdot, each meticulously nurtured to capture the unique essence of this extraordinary landscape.
This boutique wine farm with just over 11 hectares under vine has utterly spectacular views over the peninsula. Megan van der Merwe is the Head Winemaker, having taken over from Justin Van Wyk in 2021, after serving as Assistant Winemaker during his successful tenure. 2018 Beau Constantia 'Aidan'

The 2018 Aidan is a character of serious substance. A dry vintage has sculpted a wine with incredible structure, boasting flavours that lean towards the darker spectrum of fruit. This blend is predominantly Shiraz, Petit Verdot and Cabernet Sauvignon, with some Malbec and Merlot used as well.
Nose
At first, aromas of blackcurrant and blackberries fill the nose, until a necessary swirl allows for spices such as star anise, five spice and mace to enter the conversation.
Palate
Olive tapenade and fresh leather hint in the distance, beautifully balanced by a serious salinity that pins this offering to its maritime environment, where the vines grow on steep slopes circled by the cold Atlantic Ocean.

"The 2018 vintage will long be remembered for its coolness and low disease pressure. It will also be remembered as the first real vintage to feel the effects of the famous Cape Drought that started in 2015 and worsened towards 2018. When the stars and all the elements collide to produce a spectacularly good harvest, the results are always felt (and tasted, of course) in the wine. Industry wide the season of 2017 was earmarked as spectacular, and for De Toren, it was no different. The year 2017 is fondly remembered by our team for the incredible craftsmanship that went into producing one of the most outstanding vintages yet of De Toren Z, our famed Right Bank Bordeaux-styled blend.It was a season when perfectly ripened vine fruits were optimally harvested; gently reaped and sorted by the hands of our team of ladies, so that only the finest grapes were put forward for pressing and maturation in the cellar. This is the journey that our cellar team at De Toren undertook to co-create a superlative wine, i.e., De Toren Z 2017 vintage, in partnership with our key collaborator, Mother Nature. The favourable weather conditions of the season contributed to making the 2017 vintage one of the finest yet. It was a year in which the vines were perfectly balanced and restrained, producing the smallest, most concentrated berries. These hand-harvested grapes were transformed by sustainable and intelligent viniculture, resulting in this coveted vintage of De Toren Z being the highest awarded vintage yet and a true collector’s prize. At De Toren, the noble Bordeaux varietals are an expression of ancient South African soils and our signature winemaking style. As a result of all these factors – terroir, timing, technique and passion – commands attention on the palate when savouring the acclaimed De Toren Z 2017.
Producer
De Toren proprietors Emil and Sonette den Dulk left Johannesburg in 1991 to establish their vineyards in the Polkadraai Hills of Stellenbosch. Situated on southern-facing slopes overlooking False Bay De Toren enjoys the cooling effect of constant ocean breezes. Taking a holistic approach to keeping vineyard soils healthy and balanced viticulturalist Ernest Manuel employs sustainable farming practices throughout the property. Infrared Aerial Imaging is used extensively in order to monitor ripeness in various vineyard blocks and determine optimal picking times although actual harvesting and production are done almost entirely by hand. The winery is operated on gravity flow principles; a 4000 liter pressure tank in an elevator shaft (the Tower from which the winery takes its name) is cleverly used to exploit gravity in transporting wine between tanks and barrels without the use of mechanical pumps. As a result of De Toren’s innovative minimal intervention production methods their wines were among the first South African bottlings to qualify for IP (Integrated Production) certification by the Wine and Spirit Board.
The Den Dulks and winemaker Albie Koch seem to have found the key to success with their simple winemaking philosophy: gentle handling no pumps and minimum manipulation. Armed with this winning formula the boutique farm has quickly risen to the ranks of South Africa’s winemaking elite with their duo of dazzling stylish and complex five-varietal Bordeaux blends: the flagship Fusion V (which debuted in the 1999 vintage and has been hailed by Wine Spectator as a consistently polished outstanding Cabernet Sauvignon-based blend) and the Merlot-based Z introduced with the 2004 vintage.
Accolades
This is indeed a decidedly beautiful wine. As a result, UK-based Master of Wine (SA), Greg Sherwood, granted the De Toren Z 2017 a remarkable 95 points. British Master of Wine, Tim Atkin, was of the same opinion and awarded it a stellar 93 points. These scores make the renowned De Toren Z 2017 vintage the highest awarded vintage to date.
Such has been the demand for this superior wine that most of this reputable vintage’s production, limited-edition bottles have already found their place with eager oenophiles. There is however a small reserve still available since De Toren has finally released the last few cases for acquirement one last time. Lovers of fine wine and serious collectors alike should not hesitate to claim the last few remaining bottles. This wine will reward at nearest enjoyment and promises to be even more exceptional in time as it carries an aging potential of 18 years plus.

You’ve probably heard of the quaint beach town of Hermanus, situated on South Africa’s famous Whale Coast. Between 1855 and 1902, it was called Hermanuspietersfontein. In 1902, the local postmaster decided to shorten the name of the town to make addressing letters to the locals easier.
150 years later, the wine farm Hermanuspietersfontein, or HPF for short, craft outstanding wines with a serious sense of place. Their grapes come from Sondagskloof, which competes with Elgin and the Ceres Plateau for South Africa’s coolest wine growing region.
