Tasting Notes
Colour
It has a deep ruby hue.
Nose
The aromas and flavours evoke impressions of black cherries, purple plums, wild blackberries and mulberries. These are underpinned with a savoury dimension suggestive of roast game, grilled mushrooms and black olive tapenade.
Palate
There is a layer of velvety tannins that coat and refine its big body and taut muscular structure, helping to draw out its lingering aftertaste of chocolate mocha and spice. While ready to drink on release it can be expected to cellar well and evolve gracefully for many years.
The Family
The Donaldson Family have been seriously involved in viticulture and winemaking for over 40 years. Founder Ivan Donaldson planted the first Canterbury vineyard in 1976 and went on to establish Pegasus Bay in 1986 with his wife Christine. It is a true family business, with all four of their sons and two spouses involved, managing various aspects.
The Vineyards & Vine
We have about a dozen different clones of pinot noir and in some of our blocks these are intermingled. The vines, many of which are nearly 30 years old and on their own roots, grow on a series of north facing, gradually descending terraces. While the site is warm during the day it is cool at night. This allows the fruit to ripen fully but slowly and to retain good acid levels of natural acidity. The drainage is helped by stones intermingled with the soil.
The Season
A mild spring was followed by a sunny summer and a lingering dry autumn. It was a perfect growing season with enough warmth to produce optimal ripeness but it was not too hot to destroy varietal purity or freshness.
The Harvest & Winemaking
Prima Donna is part of our reserve series which we only make in exceptional years, provided it does not compromise the quality of our estate wines. It is a selection from the best barrels, coming from some of the oldest plantings in the vineyard. As with all our Pinot’s, we use traditional Burgundian winemaking methods. We picked the various blocks at different stages, depending on their maturity, aiming for a range of red and dark fruit flavours. Approximately one third of the grapes were put at the bottom of the fermentation vats as whole bunches, with the balance being destemmed on top, retaining as many whole berries as possible. The vats were kept cool over the next few days to help extract the soft, silky tannins from the pinot noir skins.
After approx a week, the must started to ferment naturally. During fermentation the floating cap of grape skins was gently plunged twice daily. When the fermentation finished, the grape remnants were left to steep in the wine for up to a week to help extract a different range of tannins that add structure and depth. The exact duration of this period was determined by daily tasting. Subsequently the wine was gently pressed off and put into oak barriques (30% new) from selected artisan Burgundian coopers. In the summer after harvest, when the weather warmed, the wine underwent a natural malo-lactic (secondary) fermentation. After maturing for 18 months, a selection from the best barriques (representing the many different plots & clones of pinot) was chosen and carefully blended, to produce the most complex and balanced wine possible.

"The 2013 Prima Donna Pinot Noir is elegant and fine. It is evolving, no question, but it's just hitting its stride now, at 10 years of age. There are pomegranate pearls, pink peppercorns, Szechuan and bramble. The wine is starting to show arnica and white pepper, garden mint and even a hint of resin. Smart! There's plenty of acid, so this has years to go. 14% alcohol, sealed under screw cap."

Tasting Notes
Colour
A youthful bright appearance with a core of ruby leading to a just fading rim.
Nose
Aromas of primary red berry fruits including dark cherry and plums, plenty of barrel spice and bottle development complexities. The beginnings of secondary aromas with a whisper of date and toasty spices layer in complexity and depth.
Palate
Still youthful and firm on the palate with textures from tannins and acidy leading the mouthfeel. Core fruit flavours mirror the bouquet with equal impressions of plums and cherry. An excellent example, just a little bit dry though easily marries with gently salty earthy food.

Most of the grapes were destemed and put into small fermenting vats, retaining as many whole berries as possible. Ten percent of whole bunches were also added to these vats. They were kept cool over the next few days to help extract the soft, silky tannins from the pinot noir skins.
After this time the grapes warmed enough to start fermenting. During fermentation the floating cap of grape skins was twice daily gently pushed back under the wine by hand to keep it moist and healthy. When the fermentation finished the vats were sealed and the grape remnants were left to steep in the wine for up to a week to help extract a different range of tannins that add structure and depth. The duration of this period was determined by daily tasting. Subsequently the wine was gently pressed off and put into oak barriques (30% new) from selected artisan Burgundian coopers. In the summer after harvest, when the weather warmed, the wine underwent malo-lactic (secondary) fermentation. Both this and the original fermentation phase were completely natural and without added micro-organisms. After maturing for 18 months in these barriques the batches made from the many different plots of pinot were carefully blended in varying portions to produce this wine.

"Alarmingly dark brown. Looked like liquid brown sugar in the glass. Initially the wine was firmly closed on the nose, so I let it rest for a minute. Gradually the bouquet opened up on notes of raisins and orange peel. I don't really know what I was expecting from this wine, but I must say I was shocked to learn how concentrated, intense, perfectly alive, and dizzying complex this wine was. With style and grace not really at the forefront, this wine was a powerhouse of intense flavours of raisins and prunes, mixed in the brown sugar. Yet, this wine was not diluted marmalade, it was structured and firm at the skeleton and perfectly mature for drinking with crème brulee. Wonderful". (97 Points).
1966 Climatic Conditions
Weather was mediocre in summer, but improved in autumn. The harvest was very long: 48 days' work out of 55 to bring in a very worthwhile and slightly above average crop in terms of volume. A very rich vintage.
A Unique MicroClimate
Château d'Yquem's microclimate is in the heart of a 20 km strip of land along both sides of the Garonne Valley where all of Bordeaux's sweet and semi-sweet white wine appellations (Sainte Croix du Mont, Loupiac, Cérons, Cadillac, and Barsac) are located.
The fact that all of Sauternes' great growths (eleven first growths and twelve seconds) are located around Château d'Yquem – the only Premier Cru Supérieur – tends to bear out Yquem's ideal location. The magic phenomenon of botrytisation is nevertheless fragile and subject to numerous meteorological factors. If the weather is too dry, noble rot is stymied. And if it rains too much, the grapes stop becoming concentrated. Furthermore, other types of fungus are waiting in the wings to take advantage of botrytis' weaknesses to take its place and ruin the grapes irredeemably... Accepting such risks inevitably leads to very low yields at Yquem and sometimes even calls for abandoning the entire crop.

This house must certainly be the Latour of Portugal. Their ports are remarkably backward yet still impressive when young. Of all the vintage ports, those of Taylor need the longest time to mature and even when fully mature seem to have an inner strength and firmness that keep them going for decades.
Tasting Notes
Colour
Deep cherry, burgundy colour, fading at the rim.
Nose
Rich, jammy harmonious fruit. Stylish, aromatic, concentrated fruit flavours.
Palate
Raisin, chocolate; plum jam. Medium-full bodied. Rounded tannins. Complex, fleshy wine. The 1983 is wonderfully aromatic and so perfumed (a characteristic of this charming vintage), yet powerful, long and deep on the palate.

The 1983 Vintage Port is up for a status check. It is in a pretty good place now. It's been as hard as nails over the years. Not anymore. With softened tannins and a medley of old Port flavors on the finish, this is both sensual and delicious, with velvety texture and an irresistible finish. It doesn't have that hard edge any more, but it does wake up and become more intense with some air. At least from this bottle, it comes together rather promptly and drinks well. It's lacking just a bit of firmness, but its complex flavors and general demeanor make it rather sexy. The lingering finish seals the deal. It can keep going for quite some time—it is Port and they tend not to drop off the table if well stored—but this is a nice time to dive in. (MS) (12/2015)

Wine Spectator
Taylor is always closed and tight when young and this is no exception. Deep ruby-purple, ripe raisin and violet aromas, full-bodied, with sweet raisin and grape flavors, a lovely balance of full tannins and an explosion of fruit on the finish. (JS, Web-1989)

The Vintage
The winter of 1982/3 was marked by extreme cold weather in February, when snow fell in Pinhão for the first time in twenty years. Poor flowering in many vineyards and overall an unusually cold year, including the month of August. However, September was hot.
The harvest was late, starting on October 3rd ,but perfect conditions prevailed. Colour extraction was more than satisfactory and the winemakers’ notes at the time record that the ‘musts’ were exceptionally aromatic.

2015 Lurton Chateau Bonnet Reserve Merlot Cabernet Sauvignon (Jeroboam) in Wooden Box

Production
Grapes come from clay-limestone hilltop vineyards of Grézillac in the Entre-deux-Mers. Aged 12 months in 20% new oak barrels.

Estate
Château de Rochemorin belonged in the 18th century to the philosopher, Charles Louis de Secondat, Baron de Montesquieu, author of the famous Persian Letters. The latter willingly became the ambassador of Rochemorin red wines to his friends, men of letters and other notables, during his numerous trips to Europe, never forgetting to praise the beautiful complexity and the mineral notes on the nose and on the palate balanced and fine, their melted and fine tannins in the finish make them a sure value of the appellation.
The vines of Château de Rochemorin which give rise to this Pessac-Léognan red occupy no less than 87 hectares on a gravel terroir typical of the appellation. Two grape varieties are represented: Cabernet Sauvignon and Merlot, from vines with an average age of 20 years. The result is a very fruity, velvety, rich wine, with well-balanced tannins.
This vast vineyard is harvested by hand and machine with mechanical sorting for plot vinification in thermoregulated stainless steel vats, before aging for 12 months in barrels comprising 30 to 40% new wood.

The release of the Villages tier represents a huge step in the broader understanding of the wonderfully diverse Yarra Valley. For years, the Yarra has been represented by both single vineyard wines and broader blends across the whole region. Mac has long held the view that with experience and curiosity, numerous sub-regions will grow in clarity and distinction. 2019 is our first release of the Villages wines and reflects our growing love and understanding of such an exceptional region.
Tasting Notes
Mac has chosen not to provide traditional tasting notes for any of his wines. His aim is that his wines hopefully capture vineyard life and vitality. As such the wines are constantly evolving. He believes that the only tasting notes that matter are yours!
The Vineyard
Sitting behind the Waramate hills, this area encompasses both red volcanic and grey loam soils making it slightly more complicated to pinpoint a clear identity of this subregion. The undulating hills provide protection from the drier winds, the rainfall is slightly higher and the perfume, weight and structure appears more dense and effortless, pulling through seamlessly to the back palate.
The Vintage
The 2019 growing season was warm and dry. Below average rainfall and warmer conditions placed huge demands on the plants. Thankfully, in early February the vines welcomed two weeks of cool days and nights returning freshness and vigour. Overall small bunches and small berries characterised the season with above average structure and fruit weight.
The Wine
The Woori Yallock epitomises Mac's passion for exploring the sub-regions and special sites of the Yarra Valley. To Mac, Pinot Noir is just a vehicle with which to express the vineyard, not the other way around.
As he said to us, "we as Aussie producers tend to get sucked into trying to emulate great French Pinot." He believes that "if you don’t care what it ends up as, but rather just expressing that site and the season", you're going to make better, more expressive wines.
Of all the vineyards he works with, this is the one Mac speaks of the most. The wines are richly fruited but highly structural, and very long lived.
In terms of characterful, story-telling Yarra Valley Pinot Noir, it really doesn't get much better.

Tasting Notes
Colour
Very intense cherry red, concentrated, almost opaque, with a purple rim, attractively vibrant and abundant hued legs.
Nose
Deep and very intense on the nose, with a marked varietal character in which the concentrated red fruit stands out. Very fine, barely perceptible wood and very well-defined balsamic undertones that give it fascinating complexity and subtlety.
Palate
Whole and vigorous on the palate. Fleshy and with nerve, very fresh. Excellent structure with great relief, although its tannins are of great quality, very fine and well developed, providing roundness, breadth and harmony on the palate. It is opulent, creamy, well-armed and with great potential, but it has an elegance, finesse and balance that make it truly spectacular in that very long finish.
Producer
Dominio de Calogia is the personal project of José Manuel Pérez Ovejas and his wife, Silvia Ortega, who was born in the spring of 2020. Conceived as a French domaine, an avant-garde design boutique winery, which appears surrounded by spectacular vineyards in an area unique between the municipalities of Roa and Pedrosa de Duero.
All the vineyards are owned by the winery and span a special terroir, Dominio de Calogia, a land that gives the winery its name and which defines the style of the wine from the start.
Authenticity and purity mark the style and philosophy of Dominio de Calogia, for this it is very important to know and understand the vineyard and look for low productions that give a high quality grape, but, above all, it is necessary to be yourself, faithful to his own style and completely impervious to influences or fashions of the moment. This is the only way to achieve a wine that transmits essence, depth.

Reminiscent of fine white Burgundy, this generous and full-bodied white is made from a blend of Chardonnay and Pinot grapes. Giovanni only produces around 150 bottles of this very special wine of which he retains a significant proportion for his own drinking pleasure!
Introducing Fattorie dei Dolfi
Born from ancient family vineyards and the infectious passion of a career-change winemaker, Fattorie dei Dolfi is a relatively young estate with a remarkably bright future. Giovanni Dolfi initially pursued a very successful career as a horse trainer during which he had the opportunity to meet the Queen Mother and began working for Marchese Incisa della Rocchetta, the owner of the legendary Tenuta San Guido which produces Sassicaia.
Through this connection he was introduced to the estate’s winemaker, Giacomo Tachis, who is regarded as the father of Sassicaia and was named Decanter’s Man of the Year in 2011. From then on Giovanni’s fate was sealed and it was only a matter of time before he and Giacomo began exploring how to unlock the potential of his family’s century-old vineyards close to the city of Pisa.
Oeno Director and Co-founder Daniel Carnio describes Giovanni’s project as “a small paradise” thanks to his relentless commitment to quality in his vineyards. Most of Fattorie dei Dolfi’s plots are surrounded by woodland which helps to shield the vines from contamination from other forms of agriculture and preserves a high degree of biodiversity. As well as creating a very low incidence of disease, this also means the estate does not need to use any chemicals on the vines. To allow the remarkable quality of the fruit to shine through, Giovanni uses a light touch in the winery as well with his wines ageing in oak barrels previously used for Sassicaia. The estate’s top wines will be produced in tiny quantities of a few thousand bottles a year, making them highly attractive for investors and collectors of fine and rare Italian wines.
Tasting Notes
In keeping with the links to DRC, the Bianco Per Amore is very Burgundian in nature. Shiny staw yellow and bright in colour. Creamy character, with sizzled acidity. Hints of toast come through. The finish is stoney.

LL’ Amor De’ Santi named after a 15th century Tuscan prayer, but is modern is style. Red currants and cranberry come through with hints of spice. There is a rich texture, with an elegenat and unique taste of medium tannins.

The story is told that many years ago, the woods surrounding this vineyard were the refuge of a dark skinned reclusive with piercing eyes, very attractive to women. He lived by poaching game and doing whatever he could. No one knew exactly where he lived, but from time to time he appeared near Poggio ai Venti vineyard, and so the people hereabouts called him “’l Bruno de’ Venti ” (the Dark Fellow of the Winds).

The myth says that Imeneus, offspring of Aphrodite and Bacchus, was a young Athenian of modest social standing but of extraordinary beauty. He fell in love with a young noble girl. While she was travelling to Eleusis, she was captured by pirates with her handmaids; among them was also Imeneus, who was mistaken for a girl. While the captors were sleeping, he slew them all and brought the girls back safe to Athens. For his courageous deed, he was awarded the hand of his beloved. For this reason, the ancient Greeks invoked Imeneus as a bringer of happiness in marriage.

2019 Luigi Bosca Paraiso

Although the name is inspired by his Finca El Paraíso de Maipú, it is a blend of Malbec and Cabernet Sauvignon conceived by the oenologist Pablo Cúneo from a selection of the best grapes from his own different vineyards. Balanced and elegant, with delicate aromas and an expressive palate, with notes of black fruit and spices. Well-integrated aging provides softness and depth.

Colour
Violet red, bright and deep.
Nose
Its aromas are intense, balanced and elegant, with a very precise and complex fruity expression at the same time. Its delicate perfumes are reminiscent of red fruits and spices.
Mouth
Winemaking
The grapes are harvested manually, then a selection of bunches is carried out; and destemmed. The must is cold macerated for 5 days at a temperature of 8°C to 10°C, and a percentage of the Malbec undergoes carbonic maceration.
Then the Malbec is fermented in small stainless steel tanks for 10 days at a temperature between 24-28°C, with constant extraction work, such as stamping and delestage, and the Cabernet Sauvignon is fermented in roller fermenters.
After the alcoholic fermentation, a post-fermentative maceration is carried out.
History
Established by Leoncio Arizu in 1926, Finca El Paraíso is the oldest, most extensive estate with the greatest variety of vine varieties implanted in Bodega Luigi Bosca. There, among its vineyards, stands the château-style mansion in which different generations of the Arizu family lived. Its walls and its imprint are also part of the history, present and future of Bodega Luigi Bosca. Finca El Paraíso wines are characterized by their roundness, their elegance and their tense and sober body.

A wide aromatic palette that takes us between fruity (raspberry, strawberry), mineral (graphite, charcoal) and floral (faded rose) notes.
Palate
The palate is just as complex, with a nice persistence of woody and spicy notes. The structure is worthy of the greatest wines of the Côte de Beaune.

The Corton vineyard is located north of the Côte de Beaune on the hill of Corton and extends over 3 municipalities: Pernand-Vergelesses, Aloxe-Corton, and Ladoix-Serrigny. The Climat "Les Renardes" is located in the middle of the hillside, on the edge of the village of Ladoix-Serrigny. Corton is the only red Grand Cru in the Côte de Beaune.
Vinification
Traditional vinification in thermos-regulated stainless steel vats on a 3 weeks period: Cold pre-fermentation maceration around 8 ° C. Pigeages and pumping over to extract colour and structure. Fermentation with a peak temperature around 30 ° C. Post-fermentation maceration at 25 ° C. Ageing between 8 to 16 months with malolactic fermentation to gain roundness. 70 à 80% de fût neuf.
Soil
Gently sloping reddish and stony soil, calcareous brown, rich in marl with a high potash content. It offers Pinot Noir its full development.

Full bodied and with good cellaring potential, Bin 707 has a secure place among the ranks of Australia's finest Cabernets. Packaged in laser-etched bottles from the 1997 vintage.
Tasting Notes
Colour
Deep red with a dense core.
Nose
An immediate, intense lift of pure ripe blackcurrant fruit, laced with mint and the faintest suggestion of violet. Cigar box and fresh tobacco oak notes showcase the sheer fruit quality. Although youthful, the nose already shows true 707 character.
Palate
Powerful and complete. Saturated fruits have soaked up the new oak culminating in a rich, sweet mid-palate and long stylish finish. The depth of fruit and defined structure, coupled with obvious muscular tannins, suggest that this wine is built for the long haul.
Vintage Conditions
Good winter rains gave South Australian regions a solid start to the growing season. Fruit set was excellent and careful vineyard management to reduce crop loads ensured the vines were in good shape to continue ripening throughout the season. Summer rains brought relief and the ensuing fine conditions towards vintage resulted in fruit reaching full ripeness and was picked in optimal condition.

Tasting Notes
Colour
Dense, deep-red, with a dark purple / black core.
Nose
Brooding, with a selective & slow aromatic release - firstly wafts of black olive (tapenade), then the faintest suggestion of sardine/anchovy - or maybe soy / Worcestershire - or could it be...? More confidently, familial barrel-ferment, cedary oak, and formic notes share the stage with blackcurrant & blackberry fruits. Inviting, tempting.
Palate
Cassis/blackcurrant varietal fruits and savoury oak stake an immediate (style) claim. Sarsaparilla and choco-mint flavours mould together to create the next layer, followed by a more savoury (Chinese mushroom/oyster sauce mix) immersion structurally impregnating any layering. Gripping tannins complete the offer.
